The New York strip is the loin side of a porterhouse: firmer bite than a ribeye, a clean fat cap, big beef flavor. It is the steak our cutters reach for when someone asks what to grill tonight.

Signature Gold Label is our hand-selected USDA Prime New York strip; Signature Black Label is USDA Choice. Dry-aged, grass-fed and American Wagyu strips are listed by name, and whole strips are available if you would rather cut your own. Order by 4 PM for same-evening delivery around Roseville, or we ship it cold — Monday through Thursday in the West, Monday through Wednesday everywhere else.
