Hours, location and payment

What are your hours?

Roseville Meat Company is open Monday to Saturday from 8:00 AM to 6:00 PM, and Sunday from 10:00 AM to 5:00 PM. We close or shorten hours on New Year's Day, Super Bowl Sunday, Easter, Memorial Day, the Fourth of July, Labor Day, Thanksgiving, Christmas Day and the day after Christmas.

Where are you located?

700 Atlantic Street, Roseville, CA 95678. Look for Sir Rose, the four-legged statue out front.

What forms of payment do you accept?

In the shop we take Visa, Mastercard, Discover, American Express, ATM and debit cards, EBT, and cash. We do not accept checks, and transactions under $10 are cash only.

Online we take all major credit cards, Apple Pay, Google Pay and Shop Pay, including Shop Pay's four-payment installments. EBT is not supported online.

Ordering and pickup

Can I order online and pick up at the shop?

Yes. Store pickup is free, there is no minimum order, and you collect at the counter at 700 Atlantic Street during normal shop hours — Monday to Saturday 8:00 AM to 6:00 PM, and Sunday 10:00 AM to 5:00 PM. Choose Pickup at checkout and we will let you know when your order is cut and ready.

Can I order over the phone?

Yes. Call 916.782.2705 during shop hours and we will take your order. Phone is also the right way to order anything custom — a particular thickness, a whole animal, a large party order, or a cut you cannot find on the site.

Do you have a minimum order?

There is no minimum for store pickup and no minimum for local delivery. Shipped orders are best value over $149 in the West and over $249 elsewhere, because shipping is free above those amounts.

Can I change my order to pickup after I have placed it?

Call us on 916.782.2705 as soon as you can. If your order has not been cut yet we can usually switch it to pickup and refund the delivery or shipping charge. Once a box is packed and a shipping label is bought it is on its way, and we cannot pull it back.

Local delivery

Do you deliver, and how far?

Yes. We deliver within about 25 miles of the shop in Roseville, which covers Roseville, Rocklin, Loomis, Granite Bay, Lincoln, Auburn, Citrus Heights, Antelope, Orangevale, Fair Oaks, Carmichael, Folsom, Rancho Cordova, El Dorado Hills, Natomas, most of Sacramento and West Sacramento. Enter your address at checkout and it will confirm whether we reach you.

How much is local delivery?

Local delivery is $9.99, and free on orders over $89.

When will my delivery arrive?

Order by 4:00 PM and your delivery arrives the same evening. Orders placed after 4:00 PM go out the next delivery day.

Shipping

Where do you ship?

We ship to all 48 contiguous states. We do not currently ship to Alaska or Hawaii — our cold chain does not reach them reliably, and we would rather say so than send a box we cannot stand behind.

Is there anything you cannot ship?

Yes. Whole and half animals, fresh seafood, and anything marked pickup only are not eligible for shipping. Everything else — vacuum sealed steaks, sausages, exotic meats and family packs — ships nationally. If you are not sure about a particular item, call 916.782.2705.

How much is shipping?

Shipping is priced by the weight of the box.

To California, Nevada, Oregon, Washington, Arizona, Idaho and Utah, shipping runs from $9.99 to $34.99 depending on weight, and is free on orders over $149.

To the rest of the lower 48, shipping runs from $19.99 to $69.99 depending on weight, and is free on orders over $249.

How long does shipping take?

Orders to the seven western states arrive in 1 to 2 business days. Orders to the rest of the lower 48 arrive in about 2 business days.

What days do you ship?

We ship Monday, Tuesday and Wednesday only. That is deliberate: a box that leaves on a Thursday or Friday sits in a depot over the weekend, and frozen meat does not improve in a warehouse. An order placed Thursday ships the following Monday.

How is it packed?

Everything is vacuum sealed, packed frozen in an insulated box with gel packs, and sent on a service fast enough to arrive cold.

My box arrived thawed, late, or wrong. What do I do?

Call us on 916.782.2705 within 7 days of receiving it and we will make it right. We would rather hear about it and fix it than have you wonder whether it was worth mentioning.

Can I return meat?

No. Meat is perishable, so it cannot be returned once it has left us. That is not a way of avoiding the question: if anything about your order is wrong, call 916.782.2705 within 7 days of receiving it and we will refund it or recut it. We would rather fix the order than argue about a policy.

Catch weight and pricing

Why is the total on my order a hold and not a charge?

Because every piece is cut by hand and no two weigh the same. When you order, we place a hold on your card for the top of the weight range shown on the product. Nothing is charged yet. Once your order is cut and weighed we charge the actual weight, and the rest of the hold is released the same day.

Will I be charged more than the amount I saw?

No. You are never charged more than the hold, and never charged for meat you did not receive. The hold is the maximum.

How long does the released amount take to come back?

It usually clears your statement within one to five business days, depending on your bank.

What does "catch weight" mean?

Catch weight means the item is priced by its actual weight rather than sold as a fixed portion. It is how you have always been charged at our counter — the scale decides, not the sticker. A steak listed at roughly 16 ounces might come in at 15 or at 17, and you pay for what you get.

Why do steaks have a grade and a thickness to choose?

Because they are cut to order. You choose the grade — USDA Choice, USDA Prime or Wagyu — and the thickness, and we cut it that way. A 2-inch ribeye is a different piece of meat from a 1-inch ribeye, not just a bigger one.

How much meat do I need?

The rule of thumb is half a pound of boneless meat per adult and a quarter pound per child, or one pound of bone-in meat per adult and half a pound per child. Buy more if you have teenagers at the table, want leftovers, or are not serving many sides. If you are planning something larger, call 916.782.2705 and we will work it out with you.

Custom cuts and whole animals

Can you cut something a particular way?

Yes. Custom cutting is most of what we do. Call 916.782.2705 or come into the shop and tell us what you want — thickness, trim, portion size, or a cut that is not listed on the site. Grade and thickness can be chosen online for our steaks; anything beyond that is a conversation.

Do you sell whole or half animals?

Yes. We sell whole and half beef, whole hogs, whole lamb, and quarters, cut and wrapped to your specification. These are special orders placed by phone or in person, and a deposit is taken when the order is placed. Call 916.782.2705 and we will walk you through weights, yields and timing.

Do you take large or party orders?

Yes. Call 916.782.2705 with what you need and when you need it. The more notice the better, particularly around holidays.

Storing and cooking

How long can I safely store my meat in the freezer?

Because our cuts are immediately flash-frozen and vacuum-sealed, they can be safely stored in your freezer for up to 6 months without losing any flavor, tenderness, or moisture. Keep the original vacuum packaging fully sealed until you are ready to thaw and cook.

What is the safest way to thaw my steak?

In the refrigerator, still in its vacuum seal, on a plate or tray to catch any moisture. Allow about 24 hours for a steak and up to 48 for a roast or a thick cut. Thaw slowly and the meat holds its juices; thaw it fast and it loses them. Never thaw meat on the counter at room temperature.

What is the difference between USDA Prime and Wagyu?

USDA Prime is a grade. It is the highest the USDA awards, given to roughly the top few percent of American beef, and it is judged mainly on marbling — the fine threads of fat inside the muscle that melt as it cooks.

Wagyu is a breed rather than a grade. Wagyu cattle marble far more heavily than conventional breeds, well past what USDA Prime requires, which is why it eats richer and is usually served in smaller portions.

We carry both kinds. American Wagyu is a cross, and it keeps the marbling while still eating like a steak you can sit down to. Japanese A5 Wagyu is the top grade of the Japanese system — extraordinarily rich, and best served in small portions alongside something plain. If you are not sure which suits what you are cooking, call us and ask.

About Roseville Meat Company

How long have you been in business?

Roseville Meat Company has been cutting and processing meat at 700 Atlantic Street since 1946, providing premium quality meats to Roseville and the Sacramento area. The counter is still the heart of the business — the website is just another way to reach it.

Is the meat the same whether I buy it at the counter or have it shipped?

Yes. The same cutters, the same cases, the same meat. A shipped box is cut the morning it goes out.

How does the ZIP box already know my town?

On a first visit we ask a location service (ipapi.co) to estimate your city and ZIP from your internet address, so we can tell you straight away whether same-evening delivery reaches you. It is a guess for your convenience only: it never sets a price or a shipping rate (your real ZIP at checkout does that), nothing is saved beyond your current browser session, and you can change it with one tap. "Use my location" asks your phone's permission first and only shows your distance from the shop.
