Central Sacramento is the far southwest corner of our route — eighteen miles from the counter, the last stops of the evening — and it's the part of the map with the most restaurants and the fewest butchers. East Sac and Midtown have been finding us for years, usually after someone served them a dry-aged ribeye and told them where it came from. The van means the Capital City Freeway is our problem now.
We're Roseville Meat Company, family-owned on Atlantic Street in Roseville since 1946. Everything is cut to order from whole primals in our back room, weighed, vacuum sealed and on a refrigerated van the same afternoon. You pay for the actual weight.

What East Sac and Midtown order
The cuts a cook orders by name. The dry-aged ribeye above all. Gold Label (USDA Prime) New Yorks at two inches, bone-in ribeye, porterhouse, and the butcher's cuts that supermarkets never have — hanger, flat iron, outside skirt, picanha, coulotte. Lamb loin chops and rack. A whole tenderloin trimmed and tied for the dinner party. The Ibérico pork from Spain goes here as much as anywhere, and when the A5 is in, Midtown orders it a steak at a time.
Land Park and Curtis Park order more like families — ground chuck, the house sausages, a Sunday roast — and Oak Park and Tahoe Park order the braising cuts: oxtail, short ribs, shank, chuck for the stew.
You know what you want. The notes box at checkout is the counter. "Hanger, trimmed, split", "skirt, outside not inside", "picanha with the fat cap on" — we'll cut it the way you'd ask for it in person.
The seafood and the holidays
The seafood case rides the same van — lobster tails, scallops, halibut, sea bass, prawns — and from November the route carries prime rib (cradled, tied, cut to the number of ribs you give us), whole turkeys and crown roasts. The holiday reserve holds your roast with a deposit; central Sacramento's orders fill the last December van first.
