A5 Miyazaki Wagyu Ribeye
A5 Miyazaki Wagyu Ribeye
How does that work?
This is the same way you have always been charged at our counter — the scale decides, not the sticker. The released amount usually clears your statement within one to five business days, depending on your bank.
Picking up? Same thing — we hold, then charge what your order weighed. You will not be asked to pay again at the counter.
A5 Miyazaki. The highest grade Japanese beef, from the prefecture that keeps winning.
A5 is the top score in the Japanese grading system for both yield and marbling, and Miyazaki has taken the national Wagyu championship more than any other prefecture. This is not a steak you cook like a steak. Two to three ounces per person, served as a course on its own.
How to cook it — Cast iron, thin slices, no oil
Slice into strips about half an inch wide. Hot dry cast iron, 45 to 60 seconds a side — that is all. It renders its own fat immediately. Salt lightly, eat straight away, and do not serve it with anything rich.
Good to know
- $94.99 per pound. Cut to thickness — a half-inch piece runs 13–16 oz, one inch 25–32 oz. Held at the top of the range, charged at the scale
- A5 Japanese Wagyu
- Butcher Trimmed™ — cap fat and silverskin removed by hand, so what you pay for is what you eat
- Cut fresh at 700 Atlantic Street, Roseville — never pre-packed
- Vacuum sealed the morning it leaves
You pay for what you actually get
Everything here is cut by hand, so no two pieces weigh the same. This is the same way you have always been charged at our counter — the scale decides, not the sticker.
When you order online we place a hold on your card for the top of the weight range shown above. Nothing is charged yet. Once your order is cut and weighed we charge the actual weight, and the rest of the hold is released back to you the same day. It usually clears your statement within one to five business days, depending on your bank.
You are never charged more than the hold, and you are never charged for meat you did not receive.
How it gets to you
